This recipe for three cheese and broccoli gnocchi only uses a few ingredients and is really easy to make but packs in a lot of flavour. Your new midweek favourite.

  • longstem broccoli 300g
  • gnocchi 500g pack
  • mixed blue or hard cheeses 150g (I used cheddar, gruyère and stilton)
  • single cream 150ml pot
  • parmesan 50g, grated

  • Step 1

Heat the oven to 200C/fan 180C/gas 6. Heat a large pan of boiling water. Cook the broccoli for 3-4 minutes until just tender. Scoop out, leaving the water. Cook the gnocchi in the same water then drain. Mix the cheeses, cream and 1/2 the parmesan and season with pepper. Mix the gnocchi and broccoli with the cheese and cream mixture and tip into a wide flattish ovenproof dish. Scatter over the rest of the parmesan. Bake for 10-15 minutes until bubbling and golden.
