Spaghetti with anchovy, chilli and breadcrumbs is an Italian cucina povera, poor man’s, pasta dish, made from ingredients found in even the most basic of Italian kitchens. Its humble beginnings should not put you off making this classic pasta recipe – it’s absolutely delicious.

- 150g spaghetti
- olive oil
- 4 anchoviesfinely chopped
- 1 clove garliccrushed
- 1 red chillifinely chopped
- a small bunch parsleychopped
- a handful of rough breadcrumbs ciabattatossed in 1 tsp olive oil and toasted until golden in the oven

Method
step 1
Cook the spaghetti following the packet instructions. drain, reserving 1 tbsp of the cooking water. Heat 4 tbsp olive oil, add the anchovies, garlic and chilli and gently sizzle for a couple of minutes.
step 2
Toss with the spaghetti, parsley and cooking water. Sprinkle over the breadcrumbs to finish.
