Roasted red pepper and tuna panini pizzas

This cheat's pizza makes a great snack, and is ready in 15 minutes. Add capers, torn black olives or basil leaves if you have them to hand. Roasted red peppers are a great shortcut for Mediterranean recipes if you're in a hurry



  • 4 ciabatta rolls
  • 290g from a jar roasted red peppers, drained
  • 1 tsp tomato purée
  • a handful flat-leaf parsley, chopped 
  • 200g tinned tuna, drained
  • 1 ball mozzarella, torn


  • STEP 1

    Split the ciabatta rolls in half and lightly toast on each side. Slice the roasted red peppers into strips and mix well with 1 tsp tomato purée, a handful of chopped parsley and some seasoning. Spread over the toasted bread.

  • STEP 2

    Flake the tinned tuna over the pepper mixture, then scatter a torn ball of mozzarella on top. Grill for 3 minutes until the cheese is golden and bubbling.
