Rigatoni with courgette, lemon and parmesan

Make courgette into a stylish supper with this refreshing pasta recipe. Packed with colour and ready in just 20 minutes this is the perfect weekday dish



  • rigatoni 150g
  • olive oil
  • garlic 1 clove, crushed
  • red chilli 1, finely chopped (optional)
  • courgettes 2, grated
  • lemon 1, juiced and zested
  • parmesan  (or vegetarian alternative) 30g, grated


  • Step 1

    Cook the pasta following the packet instructions. Drain, keeping back 2 tbsp of the cooking liquid.

  • Step 2

    Heat 2 tbsp olive oil in a frying pan and add the garlic and chilli and cook for a minute. Add the courgettes and fry for 5-6 minutes until softened. Stir through the lemon juice and zest.

  • Step 3

    Toss the pasta with the courgette, parmesan and pasta cooking liquid and serve.
