Red pepper, feta and courgette ‘lasagne’

A colourful, veggie take on a lasagne. Layers of courgettes, feta and red pepper are drizzled with dressing at each stage then finished off with a topping of pine nuts. This clever dish tastes as good as it looks and makes a special solo supper.



  • chargrilled or marinated red pepper 3 decent-sized pieces, warmed through in a frying pan
  • courgettes 2, sliced lengthways
  • feta 50g
  • mascarpone 2 tbsp
  • olive oil 4 tbsp
  • lemon juice 2 tbsp
  • mint 1 tbsp, chopped
  • parsley handful
  • pine nuts  1 tbsp, toasted


  • Step 1

    Cook the courgettes by frying them briefly in a little olive oil. Layer the pepper with the courgette and feta, drizzling dressing between the layers. Finish with the dressing and pine nuts.
