Red pepper, feta and courgette ‘lasagne’

Ingredients
- 3 decent-sized pieces chargrilled or marinated red pepper, warmed through in a frying pan
- 2 courgettes, sliced lengthways
- 50g feta
- 2 tbsp mascarpone
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp mint, chopped
- handful parsley
- 1 tbsp pine nuts, toasted
Method
- STEP 1
Cook the courgettes by frying them briefly in a little olive oil. Layer the pepper with the courgette and feta, drizzling dressing between the layers. Finish with the dressing and pine nuts.
