Ingredients

  • 3 decent-sized pieces chargrilled or marinated red pepper, warmed through in a frying pan
  • 2 courgettes, sliced lengthways
  • 50g feta
  • 2 tbsp mascarpone
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp mint, chopped
  • handful parsley
  •  1 tbsp pine nuts, toasted

Method

  • STEP 1

    Cook the courgettes by frying them briefly in a little olive oil. Layer the pepper with the courgette and feta, drizzling dressing between the layers. Finish with the dressing and pine nuts.
