These quick halloumi flatbreads with harissa dressing are easy to make, ready in under 30 minutes and vegetarian - perfect for a midweek meal

Ingredients

  • Middle Eastern flatbreads 4
  • halloumi 1 block, sliced
  • hummus 4-6 tbsp
  • cucumber ½, halved and thinly sliced
  • harissa 2 tbsp
  • runny honey 2 tbsp
  • lemon 1, juiced
  • flat-leaf parsley a handful, finely chopped

Method

  • Step 1

    Warm the flatbreads in the oven. Whisk the dressing ingredients together. Grill or fry the halloumi until golden. Spread hummus over the flatbreads then top with halloumi, cucumber and a good drizzle of dressing. Roll up and eat.
