
Quick halloumi flatbreads with harissa dressing

Ingredients
- 4 Middle Eastern flatbreads
- 1 block halloumi, sliced
- 4-6 tbsp hummus
- ½ cucumber, halved and thinly sliced
- 2 tbsp harissa
- 2 tbsp runny honey
- 1 lemon, juiced
- a handful flat-leaf parsley, finely chopped
Method
- STEP 1
Warm the flatbreads in the oven. Whisk the dressing ingredients together. Grill or fry the halloumi until golden. Spread hummus over the flatbreads then top with halloumi, cucumber and a good drizzle of dressing. Roll up and eat.
