Prosciutto-wrapped halloumi with melon and mint salad

Ingredients
- 250g block halloumi, cut into 6 slices
- 6 slices roasted red pepper from a jar, cut the same size as the halloumi
- 6 slices prosciutto
- ½ honeydew melon, halved and deseeded
- 1 red chilli, deseeded and finely chopped
- a handful mint, roughly chopped
- 1 tbsp white wine vinegar
- 1 tbsp extra-virgin olive oil
Method
- STEP 1
Wrap each slice of cheese in pepper and then prosciutto.
- STEP 2
Slice the melon and remove the skin. Put in a bowl with the chilli, mint, vinegar and oil. Season and toss together.
- STEP 3
Brush the cheese parcels with oil. Heat a frying pan and fry them until golden all over and the cheese is becoming squidgy. Serve with the melon and some bread, if you like.
