Check out this quick and easy halloumi recipe wrapped in prosciutto and served with a fresh and punchy melon and mint salad, an ideal midweek meal for 3. Plus it's low in calories, too

Ingredients

  • halloumi 250g block, cut into 6 slices
  • roasted red pepper from a jar 6 slices, cut the same size as the halloumi
  • prosciutto 6 slices
  • honeydew melon ½, halved and deseeded
  • red chilli 1, deseeded and finely chopped
  • mint a handful, roughly chopped
  • white wine vinegar 1 tbsp
  • extra-virgin olive oil 1 tbsp

Method

  • Step 1

    Wrap each slice of cheese in pepper and then prosciutto.

  • Step 2

    Slice the melon and remove the skin. Put in a bowl with the chilli, mint, vinegar and oil. Season and toss together.

  • Step 3

    Brush the cheese parcels with oil. Heat a frying pan and fry them until golden all over and the cheese is becoming squidgy. Serve with the melon and some bread, if you like.
