Pea and mint frittata

The perfect quick meal for one: whip up this healthy brunch in less than 15 minutes and start your day with the fresh taste of spring



  • shallot 1, chopped
  • peas 1 cup freshly podded
  • eggs 2, beaten
  • fresh mint chopped
  • feta handful, crumbled


  • Step 1

    Fry a chopped shallot in a little olive oil in a small pan until tender, stir in freshly-podded peas and cook for 1 minute.

    Beat 2 eggs with some seasoning and add them to the pan. as they begin to set, sprinkle on some freshly chopped mint and crumbled feta. Once the base has set, finish the frittata under a medium grill.
