Italian green salad with parmesan and lemon dressing

Take a simple bag of mixed salad leaves then add crisp peppers and red onion to turn it into a hearty vegetarian side. Finish with a creamy parmesan dressing for a light side salad, great served with lasagne or cannelloni.



  • crisp mixed salad 1 large bag, about 200g
  • carrots 2 large, peeled and finely diced
  • red onion 1 small, diced
  • red peppers 2, cut into rings
  • parmesan  (or vegetarian alternative) grated to make 1 tbsp
  • sugar 1 tsp
  • lemon juice 2 tbsp
  • extra-virgin olive oil


  • Step 1

    Put all the vegetables into a large bowl. put the parmesan, sugar, lemon juice and 5 tbsp oil into a small jar with a fitted lid. season and then shake well.

    Pour over the salad just before serving.
