Ingredients
- ciabatta 4 slices, cut into chunks
- olive oil
- artichoke hearts 1 jar (approx 280g), drained
- black olives 10, halved
- roasted red peppers 3 large from a jar, cut into pieces
- red wine vinegar 1 tbsp
- rocket 2 handfuls
Method

Step 1
Toss the ciabatta with 2 tsp olive oil and bake in a 190C/fan 170C/gas 5 oven until golden.

Step 2
Put the artichokes, olives and peppers in a large bowl. Whisk the red wine vinegar with 2 tbsp olive oil and season. Add to the bowl and toss everything, then add the croutons and rocket and toss again. Pile onto plates and serve.
