Halloumi pizzettes with caper and chilli dressing

These mini-pizzas are seriously moreish. For an even quicker meal, serve fried slices of halloumi with the dressing spooned over with some warm pitta breads.

Ingredients

  • ciabatta mix 300g
  • halloumi 250g block, very thinly sliced
  • red onion ½, very thinly sliced
  • olive oil
  • capers 2 tbsp, drained
  • red chilli 1, finely chopped
  • garlic ½ small clove, crushed
  • parsley a handful, chopped to serve

Method

  • Step 1

    Heat the oven to 200c/fan 180c/gas 6. Make up the ciabatta mix and divide into 2.

    Roll out into ovals and put them on a large baking sheet.

    Divide the halloumi and red onion between them, season and drizzle with a little oil.

    Bake for 10-12 minutes until puffed.

  • Step 2

    Mix the rest of the ingredients with 2 tbsp olive oil and season. Spoon over the hot pizzettes before eating.
