Ingredients

  • olive oil
  • ½ lemon, juiced
  • 50g young spinach
  • 4 tbsp hummus
  • from a jar 2 roasted red peppers, sliced
  • 1 tbsp pumpkin seeds, toasted
  • to serve warm pittas
  • to serve chilli sauce
  • 200g falafel

Method

  • STEP 1

    Heat the falafels in the oven, following packet instructions. Whisk 1 tbsp oil with 2 tbsp of lemon juice and season.

  • STEP 2

    Dress the spinach and divide between 2 large bowls. Add the falafel, hummus and peppers in separate piles.

  • STEP 3

    Scatter over the pumpkin seeds and serve with pittas and chilli sauce.
