Ingredients
- olive oil
- lemon ½, juiced
- young spinach 50g
- hummus 4 tbsp
- roasted red peppers from a jar 2, sliced
- pumpkin seeds 1 tbsp, toasted
- warm pittas to serve
- chilli sauce to serve
- falafel 200g
Method

Step 1
Heat the falafels in the oven, following packet instructions. Whisk 1 tbsp oil with 2 tbsp of lemon juice and season.

Step 2
Dress the spinach and divide between 2 large bowls. Add the falafel, hummus and peppers in separate piles.

Step 3
Scatter over the pumpkin seeds and serve with pittas and chilli sauce.
