Coconut lentils

This curry-style comfort dish is full of spice and ready in 30 minutes - perfect for satisfying last minute guests



  • red lentils 250g
  • coconut milk 400ml tin
  • onion 2, chopped
  • tomatoes 2, chopped
  • green chillies 2, sliced
  • turmeric 1 tsp
  • curry leaves handful
  • black mustard seeds 2 tsp
  • naan breads to serve 


  • Step 1

    Put red lentils, coconut milk, 1 chopped onion, tomatoes, green chillies and turmeric in a pan with 300ml water, season and simmer for 20 minutes, until the lentils are tender.

  • Step 2

    Fry 1 sliced onion in 4 tbsp oil until crisp, add a handful of curry leaves (or coriander) and 2 tsp black mustard seeds and sizzle together. Pour over the lentils.

    Serve with naan breads.
