  • sirloin or rump steak 1 large or 2 small, fat trimmed
  • olive oil
  • ground cumin 1/2 tsp
  • hot smoked paprika 1/2 tsp
  • pickled jalepeños 2 tbsp of chopped
  • half-fat soured cream 6 tbsp
  • coriander a small bunch, chopped
  • salad leaves 2 handfuls
  • cherry tomatoes 100g, halved
  • spring onions 4, sliced
  • tortilla chips 2 handfuls to serve


  • Step 1

    Rub the steaks with oil, then rub in the spices, season and leave. Mix the jalapeños, soured cream and coriander and season.

  • Step 2

    Heat a non-stick frying pan until it’s hot and sear the steak for 2 minutes on each side. Rest it for a couple of minutes. Slice the steak and arrange on the plates. Toss the salad leaves, tomatoes and spring onions and add to the side. Serve with a little bowl of jalapeño cream and some tortilla chips.
