Ingredients
- sirloin or rump steak 1 large or 2 small, fat trimmed
- olive oil
- ground cumin 1/2 tsp
- hot smoked paprika 1/2 tsp
- pickled jalepeños 2 tbsp of chopped
- half-fat soured cream 6 tbsp
- coriander a small bunch, chopped
- salad leaves 2 handfuls
- cherry tomatoes 100g, halved
- spring onions 4, sliced
- tortilla chips 2 handfuls to serve
Method

Step 1
Rub the steaks with oil, then rub in the spices, season and leave. Mix the jalapeños, soured cream and coriander and season.

Heat a non-stick frying pan until it’s hot and sear the steak for 2 minutes on each side. Rest it for a couple of minutes. Slice the steak and arrange on the plates. Toss the salad leaves, tomatoes and spring onions and add to the side. Serve with a little bowl of jalapeño cream and some tortilla chips.
