Smoky steak with jalapeño cream

Ingredients
- 1 large or 2 small sirloin or rump steak, fat trimmed
- olive oil
- 1/2 tsp ground cumin
- 1/2 tsp hot smoked paprika
- 2 tbsp of chopped pickled jalepeños
- 6 tbsp half-fat soured cream
- a small bunch coriander, chopped
- 2 handfuls salad leaves
- 100g cherry tomatoes, halved
- 4 spring onions, sliced
- 2 handfuls to serve tortilla chips
Method
- STEP 1
Rub the steaks with oil, then rub in the spices, season and leave. Mix the jalapeños, soured cream and coriander and season.
- STEP 2
Heat a non-stick frying pan until it’s hot and sear the steak for 2 minutes on each side. Rest it for a couple of minutes. Slice the steak and arrange on the plates. Toss the salad leaves, tomatoes and spring onions and add to the side. Serve with a little bowl of jalapeño cream and some tortilla chips.
