Ingredients
- ciabatta 3-4 slices, cut in half lengthways
- olive oil
- parmesan 50g, grated
- streaky smoked bacon 4 rashers
- half-fat crème fraîche 4 tbsp
- Dijon mustard 1 tsp
- Worcestershire sauce ½ tsp
- garlic ½ clove, crushed
- lemon ½, juiced
- little gem lettuce 2, leaves separated and torn if large
- spring onions 2, shredded

Step 1
Heat the oven to 200C/fan 180C/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Sprinkle over half the grated parmesan, trying to keep it on the bread. Bake for 10-15 minutes until golden. Grill the bacon until crisp, then break into pieces.

Step 2
Mix the crème fraîche, Dijon mustard, Worcestershire sauce, garlic and the rest of the parmesan with a squeeze of lemon juice and a splash of water, then season.

Step 3
Toss the lettuce with half the dressing and divide between 2 plates. Top with pieces of bacon, croutons and spring onions. Drizzle over the rest of the dressing.
