
Smoky bacon caesar salad with parmesan croutons

Ingredients
- 3-4 slices ciabatta, cut in half lengthways
- olive oil
- 50g parmesan, grated
- 4 rashers streaky smoked bacon
- 4 tbsp half-fat crème fraîche
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce
- ½ clove garlic, crushed
- ½ lemon, juiced
- 2 little gem lettuce, leaves separated and torn if large
- 2 spring onions, shredded
Method
- STEP 1
Heat the oven to 200C/fan 180C/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Sprinkle over half the grated parmesan, trying to keep it on the bread. Bake for 10-15 minutes until golden. Grill the bacon until crisp, then break into pieces.
- STEP 2
Mix the crème fraîche, Dijon mustard, Worcestershire sauce, garlic and the rest of the parmesan with a squeeze of lemon juice and a splash of water, then season.
- STEP 3
Toss the lettuce with half the dressing and divide between 2 plates. Top with pieces of bacon, croutons and spring onions. Drizzle over the rest of the dressing.
