Seared beef with rocket and parmesan

This fiery salad is high protein and low GI, the cherry tomatoes and wine vinegar help to keep it extra low. Plus it's ready in just 15 minutes, what more could you ask for?

Ingredients

  • sirloin steaks 2, brushed with a little oil and seasoned
  • white wine vinegar 1 tbsp
  • Dijon mustard 1 tbsp
  • rocket 50g
  • cherry tomatoes a handful, halved
  • parmesan a handful of shavings 

Method

  • Step 1

    Heat a griddle or frying pan until smoking hot and cook 2 trimmed sirloin steaks, brushed with groundnut oil and seasoned – about 2 minutes per side for rare, 3 for medium. Leave to rest for 5 minutes.

  • Step 2

    Meanwhile, make the dressing by whisking together 3 tbsp oil, 1 tbsp white wine vinegar and 1 tbsp dijon mustard with some seasoning.

    Slice the steak into strips and toss together with 50g rocket, a handful halved cherry tomatoes and the dressing. Top with parmesan shavings.
