Ingredients
- minced beef 500g
- onion 1, finely diced
- capers 1 tbsp, rinsed and roughly chopped
- gherkins finely chopped to make 1 tbsp
- egg 1
- breadcrumbs 3 tbsp
- flat-leaf parsley y small bunch, leaves chopped
- Dijon mustard 1 tsp
- Worcestershire sauce 1 tsp
tomato sauce
- plum tomatoes 2 × 400g tins
- shallots 2, finely diced
- garlic 2 cloves, crushed
- fresh thyme 1 tbsp leaves
- vegetable oil 2 tsp

Step 1
To make the tomato sauce, combine all the ingredients in a pan and season. Cover and simmer over a low heat for 1 hour, or until the sauce is thickened. Allow to cool.

Mix all the burger ingredients and season well. Shape into 4 patties. Grill for 8–10 minutes, turning once. Serve in a bun or quarter ciabatta with the tomato sauce.
