Lamb koftas with kale salad

Ingredients
- 400g lean lamb mince
- ½ red onion, finely diced
- 2 tsp ground cumin and cayenne pepper
- ½ lemon, zested and juiced
- chopped to make 2 tbsp of each mint and parsley
- 100ml low-fat natural yoghurt
- 100g brussels sprouts
- 200g kale, tough stalk removed and leaves shredded
- oil

Method
- STEP 1
Mix the lamb mince, red onion, 1 tsp each cumin and cayenne, lemon zest and herbs. Season and form into 12 small sausages. Chill for at least 1 hour.
- STEP 2
Mix the yoghurt with 1 tsp cumin and half the lemon juice. Blanch the sprouts for 6 minutes, add the kale for the last 3 minutes. Drain well.
- STEP 3
Shred the sprouts, add the kale and toss with 1 tsp oil, the remaining lemon juice, and an extra pinch of cayenne.
- STEP 4
Grill the koftas, turning, for 10 minutes until cooked through. Serve with the salad, yoghurt and flatbreads if you like.
