- small corn tortillas 4
- oil
- leftover smoky beef chilli
- eggs 2, fried just before serving
- plum tomato 1, finely chopped
- green chillies 2, finely chopped
- coriander a handful of leaves, chopped
- lime 1, juiced

Step 1
Heat the oven to 200c/fan 180c/gas 6. Brush the tortillas with oil and cook in the oven until crisp and golden. Make the salsa by combining all the ingredients in bowl. Layer the tortillas (2 for each serving) with the hot chilli, then top with the fried eggs and spoon over the salsa.
