Upgrade your usual BBQ banger with this recipe for grilled sausages with pepper salad using Luganighetta wheels from Donald Russell

Ingredients

  • Luganighetta or other spicy sausage wheels 2
  • 
olive oil
  • crusty bread to serve

PEPPER SALAD

  • roasted red peppers 2 from a jar, diced
  • cucumber ¼, diced
  • small capers 2 tsp, drained
  • pine nuts 1 tbsp, toasted
  • red wine vinegar 1 tbsp
  • basil a handful, chopped

Method

  • Step 1

    Simmer the sausages following pack instructions.

  • Step 2

    Skewer sausages to keep in a wheel.

  • Step 3

    Rub the sausages all over with olive oil and season. BBQ or griddle until char-marked and cooked through. Mix all of the salad ingredients with another 2 tbsp olive oil and season. Serve with the sausages and some crusty bread if you like.
