Ingredients

  • cooked gammon 4, thick slices
  • fresh pineapple 100g, diced
  • papaya 1 small, seeded and diced
  • red chilli 1, finely chopped
  • coriander a small bunch, chopped
  • lime 1, zested and juiced
  • rocket leaves 50g, to serve

Method

  • Step 1

    Put the gammon slices on 4 plates. Combine the pineapple and papaya with the chilli, coriander, lime juice, zest and season. Mix well and spoon the salsa over the gammon. Serve with the rocket.
