Feather steaks with chimichurri and sweet potato fries

Steak is big in Argentina and this recipe for feather steaks with Argentinian chimichurri and sweet potato fries is a great way to get a taste at home



  • sweet potato 1 large, peeled and cut into thin fries
  • olive oil
  • feather steaks 2
  • flat-leaf parsley ½ a small bunch, finely chopped
  • oregano leaves a small handful, chopped
  • red chilli 1, small finely chopped
  • garlic ½ clove, chopped
  • smoked paprika 1 tsp
  • olive oil 3 tbsp
  • red wine vinegar 1 tbsp


  • Step 1

    Heat the oven to 190C/fan 170C/gas 5. Toss the fries with olive oil and season. Spread out on a tray and cook until golden and crisp, about 20-25 minutes.

  • Step 2

    Mix together the chimichurri ingredients and season.

  • Step 3

    Heat a griddle or heavy frying pan to high. Oil and season the steak then cook for 2 minutes on each side. Leave to rest for 5 minutes. Serve the steak with the fries and chimichurri.
