Fast beef curry

A quick midweek curry for two, made easy with a ready-prepared rice pouch. With stir-fried steak strips, green beans and red pepper and a hint of curry paste this is a dish that packs a punch if you need to feed 2 in a hurry. Serve with crushed unsalted peanuts if you like.

Ingredients

  • groundnut oil
  • sirloin steak 1 × 350g, sliced into thin strips
  • Thai red curry paste 2 tbsp
  • green beans 150g, cut into 3cm pieces
  • red pepper 1, sliced into thin strips
  • Tilda Rizazz brown basmati rice 1 pack
  • roasted peanuts 50g, crushed (optional)

Method

  • Step 1

    Heat 1 tbsp oil in a wok or large frying pan to smoking hot. Add the steak and cook for a minute, turning to seal and lightly brown. Turn the heat down to medium and add the curry paste. Stir well and add 2-3 tbsp water.

  • Step 2

    Add the beans and red pepper and cook for 5-6 minutes. Add a little more water if you prefer more sauce and serve with the brown basmati rice and the peanuts sprinkled over.
