Crunchy pickle burgers with ranch dressing

Homemade burgers taste so much better than shop-bought, and this recipe for crunchy pickle burgers with ranch dressing is extra-special. By putting the pickles in the burger mix, you get a great, tangy crunch, and the ranch dressing makes it even better.



  • steak mince 200g
  • onion ½ small, grated
  • cornichons or gherkins chopped to make 2 tbsp
  • emmenthal cheese 4 slices
  • lettuce to serve
  • sliced tomato to serve
  • crusty buns 2, halved and lightly toasted

ranch dressing

  • mayo 2 tbsp
  • yoghurt 2 tbsp
  • dill ½ tbsp of chopped
  • onion ½ tbsp of finely chopped
  • garlic ½ clove, crushed
  • Dijon mustard ½ tsp
  • lemon juice 1 tsp


  • Step 1

    Mix all the ranch dressing ingredients together and season.

  • Step 2

    Put the mince, onion and pickles in a bowl. Season really well then mix and form into 2 burgers. Oil and season both sides then cook for 2-3 minutes each side in a hot pan or griddle until cooked through. Top with the cheese and cover with a lid until it melts.

  • Step 3

    Spread some dressing on the base of each bun. Top with lettuce, tomatoes then the burgers. Spoon over more dressing, put on the tops and serve.
