  • Easy

The key to this delicious ham is its glaze of maple syrup and orange juice. Make sure to ask your butcher whether the ham needs overnight soaking before cooking

  • maple syrup 50ml
  • light muscovado sugar 150g
  • oranges 4
  • raw ham on the bone 3-4kg, leaving a layer of fat)
  • whole cloves 12

  • Step 1

Put the syrup, sugar and the juice from 2 of the oranges in a pan. Slowly bring to the boil, then leave to cool.

  • Step 2

Decorate the ham by scoring the fat with a knife to make large diamond shapes. Cut the 2 remaining oranges into slices and lay over the ham, pinning in place with the cloves.

  • Step 3

Brush the ham all over with half the sugar mixture then put it on a trivet in a roasting tray. Pour 1 litre of water into the tray and cover with foil. Bake the ham for 2 hours 20 minutes, remove from the oven and take off the foil. Brush with the rest of the sugar mix. Cook for a further 40 minutes until well coloured.
