Ingredients

  • sweet potatoes 2 small, scrubbed 
  • oil
  • smoked mackerel 2 small fillets, flaked 
  • dill a small bunch, chopped
  • wholegrain mustard 1 tsp
  • fat-free yogurt 4 tbsp 
  • paprika a pinch, plus extra to serve 
  • rocket to serve

Method

  • Step 1

    Heat the oven to 180C/fan 160C/gas 4. Rub the sweet potatoes with 1 tsp oil, and bake for 40-50 minutes until very tender and soft throughout. Mix the remaining ingredients and season. Pile into the jackets, and sprinkle with a pinch of paprika. Serve with a rocket salad.
