Sweet and sour cucumber

Easy recipe for pickled cucumber made sweet and sour with sugar and vinegar. Extra flavour comes from spices and chilli to make a simple side salad.



  • cucumber 1 large, halved and seeded
  • white wine vinegar 200ml
  • caster sugar 100g
  • black peppercorns ½ tsp
  • coriander seeds ½ tsp
  • fennel seeds ½ tsp
  • red chilli ½, finely chopped


  • Step 1

    Slice the cucumber into thick diagonal slices. Put in a colander and sprinkle over 1 tsp salt. Leave to one side while you make the pickling liquid.

  • Step 2

    Put the vinegar and sugar in a pan with 5 tbsp water. Add the spices, gently bring to a simmer then cool completely.

  • Step 3

    When the liquid is cool, rinse the cucumbers and pat dry with kitchen paper. Strain the liquid over the cucumber, add the chilli and leave for an hour (2 if possible) before serving.
