Healthier pizza

On a diet but craving pizza? This skinny version has a thin and crisp base, a rich but light tomato sauce and is topped with creamy mozzarella, rocket and a little parmesan. And still only 360 calories for half a pizza!

Ingredients

  • pizza base mix 1 packet, about 145g
  • olive oil
  • garlic 1 clove, crushed
  • plum tomatoes 400g tin, drained
  • mozzarella ½ small ball, sliced
  • rocket 50g
  • parmesan shavings (or vegetarian alternative) to serve

Method

  • Step 1

    Heat the oven to 220c/fan 200c/gas 7. Make up the pizza base following pack instructions. Roll out to a large circle (about 22cm) and put on a non-stick heavy baking sheet for 10 minutes to puff up a bit.

  • Step 2

    Heat a non-stick frying pan with 1 tbsp olive oil, add the garlic and cook for a minute. Add the tomatoes, season, then cook, squashing down the tomatoes with a fork until broken down and thickened. Cool.

  • Step 3

    Spread the tomatoes over the pizza base and top with mozzarella. Bake for 20 minutes until puffed and golden. To serve, scatter over the rocket and parmesan shavings.
