  • 1 packet pizza base mix
    about 145g
  • olive oil
  • 1 clove garlic
    crushed
  • 400g tin plum tomatoes
    drained
  • ½ small ball mozzarella
    sliced
  • 50g rocket
  • (or vegetarian alternative) to serve parmesan shavings

Method

  • step 1

    Heat the oven to 220c/fan 200c/gas 7. Make up the pizza base following pack instructions. Roll out to a large circle (about 22cm) and put on a non-stick heavy baking sheet for 10 minutes to puff up a bit.

  • step 2

    Heat a non-stick frying pan with 1 tbsp olive oil, add the garlic and cook for a minute. Add the tomatoes, season, then cook, squashing down the tomatoes with a fork until broken down and thickened. Cool.

  • step 3

    Spread the tomatoes over the pizza base and top with mozzarella. Bake for 20 minutes until puffed and golden. To serve, scatter over the rocket and parmesan shavings.
