Ingredients
- red pepper 1, peeled and cut into strips
- 1, peeled and finely sliced
- avocado 1, cut into strips
- mixed salad leaves 6 handfuls
dressing
- grapeseed oil 100ml
- sushi vinegar 75ml (or distilled white vinegar with a little sugar added)
- ginger 4cm piece, finely chopped
- shallots 2, finely chopped
- soy sauce 1 tbsp
- garlic 1 clove, crushed or sliced
- golden caster sugar to taste
- lime juice to taste

Step 1
Mix the oil and sushi vinegar, then add the rest of the dressing ingredients. Season with some sugar and lime juice. Mix together the salad ingredients then dress.
