Daikon salad

Daikon, or mouli is a mild-flavoured radish that makes a perfect winter salad. For this recipe it is mixed with red pepper and avocado then perked up with a punchy Asian dressing. Make with sushi vinegar if you can - for a quick and easy vegetarian midweek meal for two.



  • red pepper 1, peeled and cut into strips
  • 1, peeled and finely sliced
  • avocado 1, cut into strips
  • mixed salad leaves 6 handfuls


  • grapeseed oil 100ml
  • sushi vinegar 75ml (or distilled white vinegar with a little sugar added)
  • ginger 4cm piece, finely chopped
  • shallots 2, finely chopped
  • soy sauce 1 tbsp
  • garlic 1 clove, crushed or sliced
  • golden caster sugar to taste
  • lime juice to taste


  • Step 1

    Mix the oil and sushi vinegar, then add the rest of the dressing ingredients. Season with some sugar and lime juice. Mix together the salad ingredients then dress.
