Chorizo Penne Recipe

Chorizo and SunBlush tomato penne

This colourful pasta dish is low-Gi but watch the portion size as too much will cause a faster rise in blood glucose! Add a tin of chopped tomatoes instead of the sunblush tomatoes if you like more sauce.



  • penne 200g
  • chorizo 150g, sliced
  • garlic 1 clove, finely sliced
  • SunBlush tomatoes 10, chopped
  • red wine 1 glass
  • flat leaf parsley a small handful, chopped


  • Step 1

    Cook 200g penne following pack instructions.

    Cook 150g sliced chorizo for 2-3 minutes in a pan.

    Add a sliced clove of garlic and 10 chopped sunblush tomatoes and season.

    Cook for a minute, then add 175ml red wine.

    Simmer gently for 4-5 minutes. Stir in a handful of chopped parsley and the pasta.
