Bulgar wheat, feta and broccoli salad

A super-fast vegetarian meal made with bulgar wheat. With feta and broccoli, this is a substantial main-course salad that can be served as a side dish for four or a main for two. The garlic, lemon and olive oil is tossed through the mix with the other ingredients to make an instant dressing.



  • bulgar (cracked) wheat 75g
  • Tenderstem broccoli tips 125g
  • lemon 1, juiced
  • olive oil
  • garlic ½ clove, crushed
  • feta 100g
  • tomatoes 2, diced
  • pine nuts 2 tbsp, toasted
  • flat-leaf parsley a small bunch, chopped


  • Step 1

    Tip the bulgar into a pan of salted boiling water. Take off the heat, cover and soak for 10-15 minutes. Drain well. Blanch the broccoli until just tender but still bright green. Toss the bulgar with all the other ingredients and season.
