  • 2 green-skinned apples
  • 1/2 lime
    juiced
  • 100g green beans
    trimmed and cut into short lengths
  • a handful coriander leaves
  • 3 tbsp roasted peanuts
    roughly chopped
  • ½ clove garlic
    crushed
  • 1 red chilli
    finely chopped
  • 1½ tbsp fish sauce
  • 1 tbsp light muscovado sugar
  • 1 lime
    juiced

Method

  • step 1

    Core and slice the apples thinly, then toss with the lime juice. Stir the dressing ingredients together.

  • step 2

    Drop the beans into a pan of boiling water and cook for 2 minutes, drain and rinse under cold water. Drain well and cut in half lengthways.

  • step 3

    Tip the beans and dressing onto the apples. Toss with the coriander and serve scattered with the peanuts.
