Winter ceviche

Ingredients
- ½ small red onion, finely sliced
- 275g sustainable white fish, cut into small cubes
- 3 tbsp lime juice
- 2 tbsp pink grapefruit juice
- 2 tbsp olive oil
- 2-3 tbsp pomegranate seeds
- 1 red chilli, finely chopped
- a few drops Tabasco sauce
- chopped to make 2 tbsp coriander
Method
- STEP 1
Toss together all the ingredients and leave for a couple of minutes. Divide between plates and serve.
