Aguachile Recipe

Aguachile is Spanish for chilli water. It is bites of fresh fish suspended in a blend of lime juice, fish sauce and fiery chillies



  • lime 6, juiced
  • serrano chillies or green chillies 2–5, finely chopped
  • garlic 1 clove, crushed
  • palm or demerara sugar 1 tbsp
  • fish sauce 1 tbsp
  • skinless sea bass fillet 250g, finely diced
  • coriander small handful, chopped
  • tortilla chips


  • Step 1

    Mix the lime juice with the chillies, garlic, palm sugar and fish sauce. Season. divide the sea bass between 6 small glasses. Chill until you are ready to eat then top with the lime and chilli mix, add some fresh coriander and serve with tortilla chips.
