Fish soup

Scandinavian food has become increasingly popular in recent years. It's known for its reliance on local ingredients used in clean, simple dishes that showcase the core flavours. This fish soup is a perfect example.



  • potatoes 6, peeled and cut into cubes
  • onion 1, diced
  • allspice berries 3, lightly crushed (find them in the spice section)
  • milk 250ml
  • white fish fillets 750g
  • Atlantic peeled prawns 500g
  • single cream 284ml carton
  • dill chopped to make 2 tbsp


  • Step 1

    Put the potato, onion and allspice in a wide pan with 500ml water, the milk and a pinch of salt. Bring to a boil and simmer for about 15 minutes until the potato is tender. Add the fish, cover, and cook for 3 minutes until opaque, then stir in the prawns, cream and dill and season. Heat through but don’t boil.
