Crab cocktails

Classic prawn cocktail is always popular but white crabmeat, served in shot glasses, is a modern alternative that will look stunning served as a canapé or a starter.



  • baby gem lettuce 2, finely shredded
  • spring onions 2, very finely sliced
  • white crabmeat 200-250g, or tinned
  • cayenne pepper
  • lemon ½
  • seafood sauce 4 tbsp, ready made
  • caviar or onuga or salmon caviar (from most supermarkets)


  • Step 1

    Mix the lettuce and spring onions together in a bowl and season. Season the crabmeat with salt, a pinch of cayenne pepper and a squeeze of lemon juice.

  • Step 2

    Layer the lettuce mix, crabmeat and seafood sauce in shot glasses and finish with a dusting of cayenne pepper and a small spoonful of caviar on top.

  • Step 3

    Keep chilled. Serve with small forks or spoons.
