Prawn and chorizo skewers recipe

  • 2 tbsp sherry
  • 2 tbsp honey
  • ½ tsp chilli flakes
  • 2 tsp thyme leaves
  • 200g raw large prawns
  • 200g chorizo
    cut into coins

Method

  • step 1

    Heat the oven to 200C/180C fan/gas 6. In a large bowl whisk together the sherry, honey, chilli flakes and most of the thyme, then season. Toss through the prawns and chorizo. Thread a piece of chorizo and a prawn onto cocktail sticks.

  • step 2

    Transfer to a lined baking tray and pour over the remaining marinade. Roast for 10 mins, transfer to a platter and drizzle over some of the cooking juices. Scatter with thyme to serve.
