Ingredients
- 50g butter
- 200g golden caster sugar
- 1 lemon, zested
- 1 lime, zested
- 50ml lemon juice
- 50ml lime juice
- 3 eggs, separated
- 50g plain flour
- 250ml milk
Method
- STEP 1
Heat oven to 180c/fan 160/gas 4. Beat butter, sugar and lemon and lime zest together in a mixer. Add juices, egg yolks, flour and milk one by one to make a smooth batter. Pour into a large bowl.
- STEP 2
Whisk egg whites until firm – fold into the batter. Pour into 4 buttered ovenproof dishes and put in a baking tray half filled with hot water. Bake for 25-30 minutes until lightly browned and set.
