Lemon and lime puds

These zesty little sponge puddings are packed with flavours of lemon and lime. Bake them in individual ramekins then serve up for a dinner party with pouring cream.



  • butter 50g
  • golden caster sugar 200g
  • lemon 1, zested
  • lime 1, zested
  • lemon juice 50ml
  • lime juice 50ml
  • eggs 3, separated
  • plain flour 50g
  • milk 250ml


  • Step 1

    Heat oven to 180c/fan 160/gas 4. Beat butter, sugar and lemon and lime zest together in a mixer. Add juices, egg yolks, flour and milk one by one to make a smooth batter. Pour into a large bowl.

  • Step 2

    Whisk egg whites until firm – fold into the batter. Pour into 4 buttered ovenproof dishes and put in a baking tray half filled with hot water. Bake for 25-30 minutes until lightly browned and set.
