Ingredients

  • a small bunch flat-leaf parsley, finely chopped
  • a small bunch tarragon, finely chopped
  • ½ a bunch chives, finely chopped
  • 1 lemon, zested and juiced
  • 2 cloves garlic, crushed
  • ½ a tsp black peppercorns, crushed
  • 200g unsalted butter, softened

Method

  • STEP 1

    Mix all of the ingredients together in a bowl with the soft butter and season generously with salt.

This butter can be made well in advance and kept in the fridge or even frozen. Just remember to let them soften before putting under the turkey skin, as it will be easier to get an even layer.
