Ingredients
- vegetable oil
- shallots 3, finely chopped
- bramley apples 2, cored and diced
- cranberries fresh or frozen, 500g
- cranberry juice 150ml
- golden caster sugar 75g

Step 1
Heat 2 tbsp oil in a saucepan and fry the shallots gently until softened. Add the apples, half the cranberries, cranberry juice and sugar. Bring to a simmer and bubble for 10-15 minutes until saucy and the apples and cranberries have begun to dissolve and collapse.

Stir in the remaining cranberries and simmer for 5 minutes more until they are softening and bursting, but not mushy. Leave to cool before serving.
