  • Easy

Cranberries + apples = cram-apple relish! A great one for Christmas, especially because it can be made a day or two ahead and kept in the fridge.

  • vegetable oil

  • shallots 3, finely chopped
  • bramley apples 2, cored and diced
  • cranberries fresh or frozen, 500g
  • cranberry juice 150ml

  • golden caster sugar 75g

  • Step 1

Heat 2 tbsp oil in a saucepan and fry the shallots gently until softened. Add the apples, half the cranberries, cranberry juice and sugar. Bring to a simmer and bubble for 10-15 minutes until saucy and the apples and cranberries have begun to dissolve and collapse.

    step 2

Stir in the remaining cranberries and simmer for 5 minutes more until they are softening and bursting, but not mushy. Leave to cool before serving.
