
Shrimps à la spetsiota

- 1 large onionthinly sliced
- extra virgin olive oil
- 3 large ripe tomatoesgrated
- 11/2 glasses good dry white wine
- 2 tbsp dried Greek oregano
- white pepper
- 700g large peeled raw prawns
- 200g fetacrumbled
- finely chopped to make 2 tbsp flat-leaf parsley
- to serve crusty bread
- to serve lemon wedges

Method
step 1
Fry the onions in a pan with 5 tbsp olive oil over a low heat until soft but not browned.Add the tomato and cook over medium-high heat until the sauce has thickened a little, then add the wine and oregano, season with white pepper and salt and cook for 2-3 minutes.

Add the prawns and cook until they’re pink and just done.Add most of the feta, stir it into the sauce, and cook for two minutes, or until the feta is just starting to melt.

Sprinkle over the rest of the feta, along with the chopped parsley and serve with crusty bread and some lemon wedges.
