Foil-baked mushrooms

At Freak Scene the kitchen uses a mix of shimeji, enoki and king oyster as well as regular oyster and shiitake mushrooms. To make it a little easier, we’ve suggested an exotic mushroom mix, as it’s more widely available.

Ingredients

  • shiitake mushrooms 150g, stems removed and cut into 3 pieces
  • oyster mushrooms 100g, torn into thick pieces
  • exotic mushroom trio mix 250g (we used Ocado Gold)
  • garlic 4 cloves, thinly sliced
  • red chilli ½, sliced
  • unsalted butter 125g, cubed
  • soy sauce 3 tbsp
  • mirin 1 tbsp
  • sake 60ml
  • lemon wedges to serve

Method

  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Lay out 2 large sheets of foil, one on top  of the other. Pile the mushrooms into the centre, scatter with the garlic, chilli and butter, then pour over the soy, mirin and sake. Fold up the sides of the foil and seal the package tightly.

  • Step 2

    Bake for 30 minutes then serve straight away with lemon wedges.
