At Freak Scene the kitchen uses a mix of shimeji, enoki and king oyster as well as regular oyster and shiitake mushrooms. To make it a little easier, we’ve suggested an exotic mushroom mix, as it’s more widely available.

  • 150g shiitake mushrooms
    stems removed and cut into 3 pieces
  • 100g oyster mushrooms
    torn into thick pieces
  • 250g (we used Ocado Gold) exotic mushroom trio mix
  • 4 cloves garlic
    thinly sliced
  • ½ red chilli
    sliced
  • 125g unsalted butter
    cubed
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 60ml sake
  • to serve lemon wedges

Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Lay out 2 large sheets of foil, one on top of the other. Pile the mushrooms into the centre, scatter with the garlic, chilli and butter, then pour over the soy, mirin and sake. Fold up the sides of the foil and seal the package tightly.

    Bake for 30 minutes then serve straight away with lemon wedges.
