Chocolate-dipped meringues with cherries and boozy cream

Ingredients
- 200g cherries, stoned
- 3 tbsp cherry jam
- 2 tsp cornflour
- 100g 70% dark chocolate, broken into chunks
- 4 large meringues
- 150ml whipping cream
- 2 tbsp greek yogurt
- 2 tbsp kirsch
- 2 tsp runny honey
Method
- STEP 1
Put the cherries, jam, cornflour and 3 tbsp of water into a pan, mix well and cook over a low heat until the cherries are saucy and softened, then leave to cool.
- STEP 2
Melt the chocolate in a bowl set over a pan of barely simmering water, or in short bursts in a microwave.
- STEP 3
Allow to cool for 5 minutes, then dip in the top of the meringues. Leave to set.
- STEP 4
Whip the cream until thickened, then fold in the yogurt, kirsch and honey.
- STEP 5
Put a meringue on each plate, and spoon over the boozy cream and cherries.
