Ingredients
- sweet potatoes 1.5kg, peeled and cubed
- baking potatoes 600g, peeled and cubed
- salted butter 75g, plus a few knobs extra
- ground coriander 2 tsp
- brown sugar 2 tbsp
- lime 1, juiced
- coriander a few sprigs

Step 1
Heat the oven to 200C/fan 180C/gas 6. Boil the sweet potatoes and baking potatoes in boiling salted water until tender. Drain really well, then mash with butter, ground coriander, 1 tbsp sugar and lime juice. Season and tip into a large baking dish. Top with a couple more knobs of butter and bake for 15-20 minutes or until golden and piping hot. Scatter with the remaining sugar to serve.
