
Baked, spiced sweet potato mash

Ingredients
- 1.5kg sweet potatoes, peeled and cubed
- 600g baking potatoes, peeled and cubed
- 75g salted butter, plus a few knobs extra
- 2 tsp ground coriander
- 2 tbsp brown sugar
- 1 lime, juiced
- a few sprigs coriander
Method
- STEP 1
Heat the oven to 200C/fan 180C/gas 6. Boil the sweet potatoes and baking potatoes in boiling salted water until tender. Drain really well, then mash with butter, ground coriander, 1 tbsp sugar and lime juice. Season and tip into a large baking dish. Top with a couple more knobs of butter and bake for 15-20 minutes or until golden and piping hot. Scatter with the remaining sugar to serve.
