Apricot friands

A friand for your friends. These light airy friands are surprisingly easy to make. Dust with icing sugar and serve with a hot cup of coffee.



  • egg whites 3, whisked to soft peaks
  • unsalted butter 100g, melted and cooled
  • icing sugar or plain flour or ground almonds
  • apricots 3 very ripe, keep back a few pieces to add with the almonds)
  • flaked almonds 3 tbsp


  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Fold the egg whites and butter into the dry ingredients, followed by the apricots. Spoon into 8 well-buttered friand or muffin tins. Sprinkle with almonds. Bake for 10-12 minutes. Allow to cool before serving.
