Saudi champagne

  • serves 8
  • A little effort

One for the drivers! If you prefer something with a bit of an alcoholic kick (which would most definitely not make it Saudi), put a shot of gin in each person’s glass.

  • lemons 6, juiced
  • caster sugar 75g
  • apples 2
  • apple juice 2ltr good quality, chilled
  • sparkling water 1ltr, chilled
  • mint leaves from a large bunch

  • Step 1

Stir the lemon juice and sugar in a small saucepan over a low heat until the sugar dissolves. Leave to cool.

  • Step 2

Halve and core the apples and cut into small chunks. Mix the juice, water and lemon syrup together and add the apples and the mint (tear some of the mint leaves and keep others whole). Add ice if you like, pour into glasses and serve.
