
Miso flavoured broth with marinated tofu

Ingredients
- 200g firm tofu, cut into cubes
- 2 tbsp (Kikkoman does a good one) teriyaki marinade
- 2 tbsp miso paste
- 600ml vegetable stock
- a few leaves spring greens, shredded
- 2 spring onions, sliced
- 1 tbsp soy sauce
- 1 red chilli, sliced
Method
- STEP 1
Toss the tofu in the teriyaki marinade and leave for 15 minutes. Dissolve the miso in the vegetable stock and bring to a simmer. Add the greens, half the spring onions and the soy and simmer for 2 minutes.
- STEP 2
Grill the tofu for a few minutes, turning until glazed. Divide between bowls. Pour over the broth then scatter over the remaining spring onions and chillies.
