Ingredients
- firm tofu 200g, cut into cubes
- teriyaki marinade 2 tbsp (Kikkoman does a good one)
- miso paste 2 tbsp
- vegetable stock 600ml
- spring greens a few leaves, shredded
- spring onions 2, sliced
- soy sauce 1 tbsp
- red chilli 1, sliced
Method

Step 1
Toss the tofu in the teriyaki marinade and leave for 15 minutes. Dissolve the miso in the vegetable stock and bring to a simmer. Add the greens, half the spring onions and the soy and simmer for 2 minutes.

Step 2
Grill the tofu for a few minutes, turning until glazed. Divide between bowls. Pour over the broth then scatter over the remaining spring onions and chillies.
