Ingredients
- 100g mature cheddar
- 1 tsp Dijon mustard
- a splash Worcestershire sauce
- 2 spring onions, finely chopped
- pepper a pinch cayenne
- 1 egg, separated
- 4 slices sourdough bread, toasted
- dressed watercress salad, to serve
Method
- STEP 1
Mix the cheddar, mustard, worcestershire sauce, onions and cayenne with the egg yolk. Whisk the egg white to soft peaks, stir into the cheese and divide between toast. Grill until golden and serve with salad.
