Cheese on toast doesn't have to be boring. These delicious rarebit soufflés are low-cost and ready in under 30 minutes, perfect for a midweek supper.

Ingredients

  • mature cheddar 100g
  • Dijon mustard 1 tsp
  • Worcestershire sauce a splash
  • spring onions 2, finely chopped
  • cayenne pepper a pinch
  • egg 1, separated
  • sourdough bread 4 slices, toasted
  • watercress salad dressed, to serve

Method

  • Step 1

    Mix the cheddar, mustard, worcestershire sauce, onions and cayenne with the egg yolk. Whisk the egg white to soft peaks, stir into the cheese and divide between toast. Grill until golden and serve with salad.
