Linguine with broccoli and roasted peppers

Ingredients
- 150g linguine
- oil olive
- 2 anchovies, drained and chopped
- 3 cloves garlic, sliced
- 4 roasted peppers, cut into chunks (look for ones in brine rather than oil)
- ½ lemon, zested
- 200g broccoli, cut into pieces
Method
- STEP 1
Cook the pasta following pack instructions. Heat 2 tbsp olive oil in a pan, add the anchovy and garlic and cook on medium heat until garlic is golden. Remove from the heat and add the peppers and lemon zest.
- STEP 2
About 4 minutes before the pasta is done, add the broccoli to the same pan; drain when both are ready, reserving 2 tbsp of the liquid. Return to the pan, add the pepper mixture and toss together with the reserved liquid.
