Primavera salad

This lemon and herb infused veggie primavera salad is packed full of delicious ingredients like asparagus, goat's cheese and zesty lemon. It's made even better with Gallo 3 cereal expresso - a mix of grains and orzo, which gives it a lovely silky texture.



  • Gallo 3 cereal expresso 250g pouch
  • lemon 1, zested and juiced
  • garlic 1/2 clove, crushed
  • asparagus tips 50g
  • peas 50g
  • baby courgettes 2, sliced on the diagonal
  • goat’s cheese 50g, crumbled
  • mint or basil or parsley a good handful of mixed, chopped


  • Step 1

    Step 1

    Microwave the pouch as directed then tip into a bowl and add the lemon juice, zest and garlic. Season and leave to cool.

    Blanch the veg, rinse under cold water then tip into the bowl and toss well. Add half the herbs and toss again.

    Tip onto a platter, add the goat’s cheese and the rest of the herbs.
